Waldorf Astoria Beijing Launches New French Menu

Waldorf Astoria Beijing has introduced a French menu inspired by Chinese imperial cuisine at its popular eatery Brasserie 1893, with Chef Addison Liew teaming up with chef Ivan Li to curate a special French menu inspired by authentic Qing Dynasty cuisine. The seven-course set includes Ocietra Caviar and Sea Urchin – a modern interpretation of one of Empress Dowager Cixi’s favourite dishes – and Classic Duck Foie Gras Terrine with Port Wine and Cherry Marmalade
